It is a region-specific vegetable which is actually an unopened flower of cane shoot. Fijians add this vegetable to coconut milk and curry. The red shoot contains nutty and crumbly flavor while the green shoot is soft. It has a certain consistency and is delicious. 

15. Fijian Curry
