The pork ribs, chicken, chopped pork and beef briskets are basted in their special sauce and then set over blazing hickory wood and smoked for 14 hours. The heat helps the sauce penetrate deep into the meat, turning it into a perfect shade of pink. Because of the slow cooking, the meals are moist, tender and full of flavour. They serve different sauces on the side ranging from mild to hot and some meals are served with mustard sauce as well. The decision of how much sauce you want is left to you. Everything is prepared fresh and in house, from their meats, to their side dishes and their 40 item salad bar.
