Overview

Taste and tour of one of the oldest traditional balsamic vinegar of Modena DOP and balsamic vinegar of Modena IGP producer. Thetour starts with a tour of the vineyards around the company and we see all the productions from the grapes to the final products. You will then taste balsamic vinegar from 3 to 100 years old. Welcome to the world of top quality balsamic vinegar.

The visit will take place in Italian or English and will be led by the owner of the company. The visit starts with the explanation of the vineyards, which you will see all around. The vineyards are for the production of balsamic vinegar and wine production of Lambrusco grasparossa castelvetro.

You will then see all the processing phases, from the pressing of the grapes, the wort boiling cooked inside the boiler, to the filtration and mixing. Continue until inside the acetaia where the vinegar begins its ageing step within the wooden barrels of different types of wood and different sizes. Here, vinegar has been ageing throughout 7 generations, and now you will see the historical vinegar factory, dating back to 1860.

You will also have the opportunity to taste the 'young' balsamic vinegars, produced for use on vegetables, salad and daily use, to more 'aged' vinegars, for use on meat and fish, to enhance the flavor of more refined dishes. Then we get to the tasting of the 'Extravecchi' (very old), that have been ageing from a minimum of 12 years up to the reserves of the family of over one hundred years of ageing.
You will have the opportunity to stop for lunch or dinner, should you wish and taste some typical dishes. At the end of the meal you will be offered Grasparossa Lambrusco, a wine produced on site. You may also purchase some products to take home.

  • Highly recommended balsamic vinegar experience. We learned all about the history of this multi-generational family owned company and the practices used to nurture the vinegar. Unlike making wine, the balsamic casks need air flow and light to bring out the best flavor. The openings in the tops of the casks are covered with linen, rather than corked, and exude a wonderful fragrance. We tasted the vinegar at several different ages, including one that was 100 years old. We were served some local cheese and cured ham, which is not like anything available in the United States. The owner and his father were attentive and answered all of our questions. I purchased some of their products and I'm enjoying them on a daily basis. Items can be purchased online, also.

  • Unlike my wife, I am not a Balsamic vinegar afficionado. However, this tour amazed me. I had no idea that this would be an experience that would allow me to understand why people crave, and rave about, real Balsamic. I even found out why it's called Balsamic.

    The history and the tour were fantastic, in the real sense of the word. Imagine a family-run business/tradition that has been in continual operation since 1860 imagine barrels over 150 years old that are still producing DOP Balsamic.

    Our guide, Marcello, who is the great-grandson of the founder, was fluent in English, charming, informed, gentlemanly and enthusiastic. His father's English was inexistant but that didn't prevent us from having a warm conversation and sharing jokes. The actual tasting of the various products, as well as cheese from the neighbouring formaggieria, and the family's own wine, was an eye-opener.

    The setting is rustic, and a pleasing ride from downtown Modena. A two-hour tour that is truly excellent value for the money. Go for it if you possibly can!

  • What a great tour! Such a great experience touring the family Balsamico place that has been making balsamic for over a hundred years. A special experience.

  • What a pleasant and educational experience this tour was from the start to the conclusion. Our guide, Marcello, explained every step of production from growing and caring for the grapes to the final bottling. The family history is a story in itself as Marcello spoke of a very long trail of love for the process and purity of product. I would do this tour again just to taste the 100 year old Balsamic vinegar again. Just do it.

  • Amazing experience!!! The Cavadoni family were wonderful hosts, we felt very welcomed and enjoyed learning about their family tradition of making balsamic. And the balsamic is delicious!!! The tour ended with a wonderful lunch and time spent just chatting with them. Truly a perfect experience.

  • We had a wonderful time and learned so much about balsamic vinegar, including the process from the grapes to the reductions, the two categories DOP vs IGP and the sampling of the different aged balsamic vinegars.
    Marcello, our host, shared his family history and the special barrels of the balsamic vinegar for his children. His father, too, was very gracious with the samplings.
    It is a 30 minute taxi ride from Modena to the tour which may cost up to 40 euros, but it is well worth the experience!

  • I would have to say that this tour was the most unbelievable I ever was on . From the outset we were treated like family. We arrived early for our tour and was greeted with open arms. Not knowing what to expect, The tour exceeded my expectations . I would highly recommend this tour to anyone.

  • This was my favorite tour in Italy, and I love many things in Italy! My mother and I like balsamic and thought it would be interesting to learn about the process. Marcello, who was the guide, and family member from this family owned company, was ABSOLUTELY IMPRESSIVE. He was knowledgable, provided great, extensive information, was personable and overall a delight to be around. The tour provided in-depth knowledge of the process of making balsamic the significance of the labelling and how to read a label. It was pretty obvious that most of what we have in the US is not even close to real balsamic! We learned about the D.O.P and I.G.P labelling. This was followed by tasting all different years of production of the balsamic. I now know to look for must as the first ingredient in high quality balsamic. In addition there was an incredible lunch with fresh meat, homemade wine, balsamic, bread - little warm sandwich type, dessert with brownies and gelato. Even after the tour was over, he got coffee with us at the train station where he gave us a ride and provided tips about what to do during the the rest of our trip. I would highly recommend this experience - the price is so reasonable, I am worried Marcello actually loses money on the experience. However, he is so passionate about this business that you feel energized listening to him. We also bought real balsamic to bring back, would have gotten more but the flights make traveling with liquids such a challenge. I would definitely do this tour again!!
