As a starter, you will cook our Peruvian National dish called "Ceviche" the most popular dish among Peruvians. It is made of small size pieces of fish marinated raw in fresh aromatic lime juice tender onions, boiled sweet potatoes mixed with or without Andean hot chilis. Then, the main dish is "Sudado de Pescado" which is steamed Fish with red onions and fresh herbs; cooked with yellow half spicy sauce.
As starter, you will learn to prepare the two most Typical Peruvian sauces: Papas a la Huancaina (Huancayo-style potatoes) which comes from the middle of the Andes of Peru and Ocopa sauce which is from the south of the Andes near Cusco. Both starters consist of a creamy slightly spicy sauce made with the freshest aromatic herbs from the mountains and other fresh local chili with cheese sauceboth served with native organic sliced boiled potatoes. The main course is "Aji de Pollo" which in English means chili chicken and consists of thin strips of chicken served with a creamy yellow and spicy sauce, made with aj amarillo (yellow chilis), cheese, milk, cronchi bread.
For starter you will make the delicious "Causa Limea" Mashed organic yellow potatoes seasoned with lime and aji (hot pepper), and filled with fresh seasonal local veggies (it is less than half spicy). "Lomo saltado" which is beef tenderloin slices, sauteed with onions, tomatoes, aji (hot peppers), and more spices. It is served with French fries and rice.
For starter, you will also make "Solterito which in English means Single men and it has green peas, faba beans, Quinua! and olive oil. The main course is Pimento Relleno which is a stuffed capsicum, filled up with fresh vegetables and organic herbs from the north of the country.

Our group of 7 had the most incredible afternoon with Haku Tours! After being pick-up at our accommodations, we drove to a local market and chose our menu for what we would be cooking later on the way. They easily accommodated any food preferences/allergies and were very thoughtful throughout the whole process. Our guide, Jahaira was incredible and walked us through the food stalls explaining all of the local produce and shopping practices. We cooked three authentic dishes and the process was paced wonderfully and not rushed. In between courses, we had an exotic fruit tasting with all of the fruits we had seen earlier in the market. The entire experience was amazing and perfectly interactive. The chef and Jahaira made the experience even better. Nothing but glowing things to say and would recommend this to anyone visiting Lima.

Our guide was delightful and answered all our questions - knew the market backwards and forwards. The chef was terrific - we learned alot, had a great different experience, and ate well. Highly recommend this experience if you are tired of cathedrals and museums!
We were 2 couples and decided to take this cooking class to mix things up a bit. Our English guide was Mabel and the chef was Ruth. They were both great. Lots of positive energy and very knowledgeable about all the products at the market. Lots of fun!
This was so enjoyable!! I enjoyed the tour in the local market the most. It was fun and amazing learning the local vegetables and fruits of Peru. The cooking class was fun as well!
The team was amazing, our Chef and Maribel were both amazing, very fun and eager to explain any of our questions and share their secrets on the recipes. The food we cooked was delicious, and we greatly enjoyed getting to know the girls, their local culture and cuisine. If you enjoy cooking, I could not recommend this class enough!
Great overall experience! 1ˢᵗ I was taken to a large local market, where we were shown and explained the uses of various Peruvian vegetables, fruited, spices, meats, and seafood. Then we participated in a cooking class, lead by a very experienced chef. We prepared and ate local fruit, vegetable, Beef, and Sea Bass dishes.

With Chef David's guidance, we made a wonderful loma saltado! First, our trip to the market was interesting, seeing fruits and vegetables that aren't available to us back home. When we got to the kitchen, we made light appetizers to hold us over until the fruit plate was prepared. After sampling a dozen different fruits, we were back in the kitchen preparing the "real" appetizer. Ours was a layered potato dish made in a round mold, filled with sautéed vegetables. By the time we were ready for the loma saltado, there was barely room in our stomachs to hold it! Chef David was great, very outgoing and interested in his students. It was a fun 4 hours, but be sure to go hungry, it is a lot of food!
