Overview

Sample regional French produce and learn the concept of "terroir" on this 2-hour wine and cheese pairing class in Paris. Taste four types of wine and one style of Champagne with your instructor, an experienced sommelier. Try five different types of cheese and gain insight into their characteristics. Hear the origins of the wine and cheese tasted during your class, and learn how to pair them for the bGare de l|est flavor combinations. Itinerary:


Meet your instructor — an experienced sommelier — at your cookery school in central Paris to begin your wine and cheese pairing class. During your class, taste four wines from different regions across France as well as one Champagne. Listen as your guide explains the five major French cheese families, then sample them to experience their subtleties of flavor for yourself. Hear the geographical and historical origins of the wine and cheese you’re tasting and gain insight into the key concept of "terroir" in French produce. Enjoy cheese pairings accompanied by a selection of sliced ham, bread and olives, and savor the wine and cheese as they work together to create complex aromas and flavors. Take a knife and master the art of sabering a Champagne bottle to open it, then share a glass with your classmates. At the end of your 2-hour class you will receive Drop-Stop for the perfect pour every time.

    I think Stephan may have been a little shocked at our sheer ignorance of French wine and cheese, but my goodness we learned a lot! A highlight was when my sister got to pop open a champagne bottle with a sword and we all learned how to open one with just a champagne glass—definitely fabulous new party tricks! This was a super fun experience that I highly recommend.

    We really enjoyed our wine and cheese pairing with Stephane. He was knowledgeable about the wine and cheese but he made the class interesting and fun. We laughed so much with him. If we return to Paris I would definitely take more classes at Le Foodist.

    Le Foodist это небольшая кулинарная школа в 5 минутах ходьбы от Пантеона или 10 минутах от Нотр Дама. В этом уютном месте проводят разнообразное обучение! Например могут научить азам французской кулинарии - технологии, сочетания продуктов, классические рецепты, тоже самое касается и кондитерки и выпечки. Хотите получить практический навык по приготовлению теста для круассана или испечь свой настоящий багет традицьон , приготовить макаронс или лимонную тарту? Нет ничего проще - просто записывайтесь в школу! Занятия рассчитанные от нескольких часов до нескольких дней в зависимости от сложности курса. Также тут проводят обучающие винно-сырные дегустации, именно они меня и заинтересовали и должен сказать я ни на секунду не пожалел о своем выборе Le Foodist . В легкой, доступной форме с шутками и в абсолютно дружеской атмосфере Стефан (профессиональный сомелье) рассказал нам о классификации французских сыров, их основных вкусах и ароматах. Ну и на практике мы попробовали 5 знаменитых видов сыра защищенных AOP (сертификация сыров, всего из более чем 400 видов французского сыра только 46 входят в список сертифицированных и защищенных) : сыр с голубой плесенью "Bleu d'Auvergne", козий сыр 2 типов выдержки(более кремовый и более твороджный), крем чиз, мою любимый твердый конте (12 и 24 месячной выдержки) и невероятно пахучий сыр livarot (тот который могут осилить только профи))) К каждому виду сыра было предложено наиболее правильное вино, с разъяснениями , следственно-опытными примерами, шутками и практическими навыками дегустации. Из вин мы попробовали Совиньон Блан в сочетании с козьим сыром, Бордо с сыром Конте, восхитительный Шираз с livarot, полусладкое вино из долины Эльзас в сочетании с сыром с голубой плесенью (мое любимое сочетание) и напоследок нам предложили идеальное шампанское с идеальным же крем сыром Шампанское открывали не просто так а с демонстрацией техники сабраж - когда бутылку открывают саблей или другими предметами. Кстати нужно будет приобрести бутылочку недорого игристого и попробовать этот эффективный метод на личной практике))) Как попробую - обязательно отчитаюсь!!!))) Почти 3 часа дегустации пролетели незаметно - было очень интересно, вкусно и познавательно! Я вот теперь хочу устроить встречу с читателями и провести подобный урок, понести знания в массы так сказать! Как вам такая идея? Очень рекомендую Le Foodist - профессионалы достойные похвалы!!!     Three friends and I recently did the Wine and Cheese Pairing Class at Le Foodist with Stephane. I can say, for me, it was a great success. It was fun, informative and delicious. The class was led by Stephane, who was very informative and I really felt like I learned a bit about wine and cheese and how to pair them together in a way to bring out the flavors of both. And it was also fun, Stephane was very engaging and made sure to include everyone, there were 7 people all together. We tasted the wine, the cheese, talked about nuances and flavors but not in an overly pretentious way. We even learned how to open a bottle of champagne with a saber! That's all I'll say about it-but trust me it was great! I highly recommend this class, and this company. I had taken a cooking class the previous year, 2018, and really enjoyed that as well. I feel, for me, I would definitely return to do another class if I return to Paris. Merci beaucoup, Stephane, a bientôt! Susan
